March Life Update.

Hi there!

I've been absent from my blog for a couple of weeks. I'd love to say that it's just because of a uni-work overload, but it's not. I've been feeling very down and really struggling to pick myself back up again. This sometimes happens to me so it's no shocker, but it's something that I dislike about myself a lot and I have to remind myself that it's not entirely my fault. It's partly because of this really horrible thing that I and many others unwillingly have problems with. I've briefly spoken about mental health on here before, however I'd like to keep the conversation going. I plan on posting more about it all and perhaps my own personal experiences too (maybe).

Easy Step By Step Pumpkin Soup

My dad grew some pumpkins and brought me a couple down when they visited. I love pumpkin and I also love soup, so here's my home made pumpkin soup for beginners. 
First you need your ingredients:
1 small pumpkin, cut up into small chunks 
A handful of new potatoes, also cut into chunks  
1onion chopped finely 
A table spoon of butter 


Melt the butter into a large sauce pan. 

Add the onions and cook until they start to go soft and see through. 

Once the onions are done, add the pumpkin and potatoes to the pan and mix them up. Pop the lid on and leave on low heat for about 15 minutes. 

Come back and add about a kettles worth of hot water. Mix and allow the vegetables to boil through for another 15 to 20 minutes. During this time add your preferred herbs/spices to taste. 
I used spiced cajan, Salt and pepper (I didn't have much else to hand), but you can use whatever you'd like. If you're adding garlic to this recipe then it's best to pop it in at the beginning with the onion. 


Eat with some nice crusty bread, I chose to have a small garlic stick :)

Home-made Carrot and Lentil Soup

I am definitely no chef. I often ring friends up asking ridiculously "urgent" questions, such as "How long do you cook rice?!" and "how do you fry an egg?!" Seriously, I'm that useless when it comes to cooking for myself. BUT as part of my quest to eat better I realise that I probably need to sort this out. I found a super easy recipe online for carrot and lentil soup a few weeks ago and finally got around to making it. Here's how it turned out...

It was so yummy, even if I do say so myself! I often eat soups, but there's something about knowing that it's home made and that the ingredients are what I call 'real' that makes it taste all the better.
Here's the recipe if you'd like to have a go at making this delicious soup. If I can do it, anyone can. Also if you know of any healthy, but simple recipes please feel free to recommend them in a comment below. I'm serious about learning to eat better and I could use all the help I can get!
